I’m all about food that requires minimal energy and ingredients. 

Sure, coffee cake is irresistible and yummy and all that, but unless it’s a special occasion, you can assume I’m not going to wake up two hours early to make breakfast. It’s just not going to happen. 

So any recipe with less than five ingredients (minus spices because we all know those don’t actually count) that requires little effort is right up my alley. Hence these breakfast brussels sprouts and eggs.

I know what you’re gonna say, “Margaret, you could literally just make eggs…” And I mean I could, but ya girl is out here trying to eat clean and get some veggies in her system in a way that doesn’t make her want to gag. And I’ve always loved brussels sprouts, so this recipe is more of a meal than just fried or scrambled eggs.

Pancakes are one of those breakfasts that seem like they take forever to make and cleanup is more than a chore. 

And as a college student, I never actually have the time to cook up an entire batch of pancakes. But they’re actually one of my favorite breakfasts so I wanted to figure out how to make pancakes a feasible breakfast option for me.

I was that kid who, when not allowed to leave the table until their plate was clear, would shove spinach into the pockets of her overalls when no one was looking.

Of course, this was long before kale became a “thing.” I don’t know if 8-year old me would have loved or hated kale.

All I know is 18-year old me is utterly obsessed with it. Adding it into my morning egg scramble, tossing it into my green smoothies, and now, using it as a base in my salads.

The holidays are such a stressful time of year. 

The nightmare that is finals season tends to shove holiday gift shopping to the back burner. 

But holiday baking is the one thing that instantly melts away stress. I know for some people holiday baking is a lot of unneeded pressure, but not for me. There’s just something about the simplicity of it, the delicious smells, the smiles you get to see as people take a bite. 

However, there are some recipes out there that have SOOO many steps, ingredients used that you don’t normally buy, or just take forever and a half to make.

The first time I ever tried quinoa I hated it.

Everyone I heard talking about quinoa had nothing but good things to say about it, but there was something definitely off with the quinoa I tasted. It was very bitter, and I had to force myself to swallow it. 

Turns out, though, that when quinoa isn’t washed and prepared properly it retains a bitter taste from a natural substance called saponin. But with thorough rinsing, quinoa has a neutral, nutty taste.
